Cooking Instructions
Step 1
First, let’s prepare the vegetables and imitation crab sticks for the spring rolls. Wash the cucumber thoroughly, remove the seedy core, and julienne it into approximately 0.5 cm thick strips. Julienne the imitation crab sticks to a similar size. Thinly shred the red cabbage. Wash the perilla leaves, remove the stems, pat them dry, and cut them into 2-3 pieces. Having all the ingredients prepped like this will make wrapping much easier.
Step 2
Drain the canned pineapple slices well and cut them into 2-3 bite-sized pieces. The sweet and tangy flavor of pineapple will enhance the overall taste of your spring rolls.
Step 3
Now, let’s marinate the pork. In a bowl, combine the stir-fry pork with soy sauce, sugar, black pepper, sesame oil, minced garlic, and sesame seeds. Mix everything well until the pork is evenly coated. Marinating the pork in advance allows the flavors to meld beautifully, resulting in a tastier filling.
Step 4
Heat a lightly oiled pan over medium-high heat. Add the marinated pork and stir-fry quickly, breaking up any clumps to ensure even cooking. Cook until the pork is fully done. This stir-fried pork is delicious enough to be served as a side dish on its own!
Step 5
Prepare a shallow bowl of warm water. Briefly dip one rice paper wrapper into the warm water until it’s pliable – be careful not to oversoak, as it can tear easily. Lay the softened wrapper flat. Arrange your desired fillings: a perilla leaf, red cabbage, cucumber, bean sprouts, the stir-fried pork, imitation crab stick, and pineapple slices. Don’t be shy with the fillings, but avoid overstuffing to make rolling easier. The joy of spring rolls is customizing them to your liking!
Step 6
To roll, gently fold the bottom edge of the rice paper over the fillings. Then, fold in the sides, and tightly roll the spring roll upwards. Your delicious Vietnamese spring roll is ready! Serve with sweet chili sauce for dipping – the sweet and spicy combination is a perfect match. Enjoy this healthy and flavorful meal packed with fresh vegetables and hearty pork!
