  • 100g granulated sugar
  • 4g Earl Grey tea leaves

Earl Grey Milk Tea Base
  • 160g milk
  • 240g heavy cream
  • 20g granulated sugar
  • 6g Earl Grey tea leaves

Cooking Instructions

Step 1

First, let’s make the Earl Grey milk tea base. In a microwave-safe bowl, combine 160g of milk, 240g of heavy cream, and 20g of sugar. Add 6g of Earl Grey tea leaves and stir well. Heat this mixture in the microwave for 3 minutes.

Step 2

After removing from the microwave, let the mixture steep for about 3 minutes to allow the tea leaves to infuse their flavor fully.

Step 3

Strain the infused Earl Grey milk tea through a fine-mesh sieve to remove the tea leaves. Set aside 30ml of this strained liquid in a small separate bowl for the glaze later.

Step 4

Now, let’s prepare the scone dough. In a large bowl, whisk together the sifted cake flour, all-purpose flour, baking powder, salt, sugar, and the 4g of Earl Grey tea leaves designated for the scone dough. Ensure they are evenly combined.

Step 5

Prepare 160g of cold butter. Using a pastry scraper or a knife, cut the cold butter into small, uniform cubes. Add these butter cubes to the dry ingredients in the bowl. Using the scraper, cut the butter into the flour mixture until it resembles coarse breadcrumbs. It’s crucial to keep the butter cold throughout this process to ensure a tender scone.

Step 6

In a separate small bowl, whisk 2 eggs. Add the beaten eggs to the flour and butter mixture. Using your scraper or fingertips, gently mix until just combined. Be careful not to overmix.

Step 7

Add 2 drops of vanilla extract for an extra layer of flavor. Gradually pour in 240ml of the reserved Earl Grey milk tea base (from step 2), mixing gently with a spatula until the dough just comes together. Avoid kneading; stop mixing as soon as there are no dry streaks of flour visible.

Use your spatula to gently shape the dough into a cohesive mass, forming an ’11’ shape. Transfer the dough into a plastic wrap and refrigerate for 1 hour to rest and firm up. After chilling, divide the dough into portions and shape them into rounds or wedges. Place the shaped dough onto a baking sheet lined with parchment paper.

Step 9

Bake in a preheated oven at 180°C (350°F) for approximately 22 minutes, or until the scones are golden brown and baked through. Baking times may vary slightly depending on your oven.

While the scones are cooling on a wire rack, prepare the Earl Grey glaze. In a small bowl, combine the 30ml of reserved Earl Grey milk tea (from step 2) with 100g of powdered sugar. Mix until smooth. The consistency should be thick enough to coat the scones but not too runny. Adjust with a little more powdered sugar or a tiny drop of water if needed.

Once the scones have cooled sufficiently, drizzle or spread the Earl Grey glaze over the tops using a brush or by dipping the tops into the glaze. Smooth the glaze before it sets.
