Ingredients
- 100g Crown Daisy (Shungiku/Garland Chrysanthemum)
- 1/2 block Tofu (approx. 80g)
- A pinch of coarse sea salt
- 1/2 Tbsp Tuna extract or Soy sauce for soup
Cooking Instructions
Step 1
First, wash the crown daisies thoroughly. Bring a pot of water to a rolling boil with a pinch of coarse sea salt. Once boiling, add the crown daisies and blanch them for a very short time, about 30 seconds to 1 minute. Be careful not to overcook them, as they can become mushy. Immediately rinse the blanched crown daisies under cold water to stop the cooking process, then gently press them with your hands to remove excess water.
Step 2
Prepare the blanched crown daisies and half a block of tofu (about 80g). Remove the tofu from its packaging and lightly pat it dry with paper towels before using.
Step 3
Mash the tofu with your hands or roughly chop it with a knife. You can easily mash it using a spoon or fork. If there’s too much water, the flavor might be diluted, so it’s best to squeeze out as much water as possible with your hands. Combine the prepared crown daisies and the well-squeezed tofu in a bowl.
Step 4
Add 1/2 tablespoon of tuna extract or soy sauce for soup and gently mix everything together with your hands. Ensure the fragrant crown daisies and savory tofu are well combined. You can adjust the amount of tuna extract or soy sauce to your preference, or add a little more salt if needed.
