Fluffy Potato Frittata
A Delightful Potato Frittata Using Seasonal Potatoes
Introducing ‘Potato Frittata,’ an Italian-style omelet that’s easy to make with ingredients you already have in your fridge. The combination of fluffy eggs, savory potatoes, and fragrant onions is exquisite, making it a perfect snack or brunch dish.
Main Ingredients
- 1 medium potato
- 1/4 onion
- 2 stalks of green onion (scallions)

Cooking Instructions
Step 1
Wash the potato thoroughly, peel it, and slice it into 0.5cm thick half-moons. Place the sliced potatoes in a microwave-safe dish and microwave for about 3 minutes until slightly tender. This pre-cooking step will make the potatoes cook faster and achieve a better texture when sautéed.
Step 2
Peel and thinly slice the onion. Finely chop the green onions. The sweetness and aroma of the onion will enhance the frittata’s flavor.
Step 3
Heat 1 Tbsp of cooking oil in a pan over medium-low heat. Add the sliced onions and the pre-cooked potatoes. Sprinkle a pinch of salt over them and sauté until they are lightly golden brown. The potatoes should be tender enough to be easily pierced with a fork.
Step 4
In a bowl, crack the 3 eggs. Add a pinch of salt, a pinch of pepper, and 2 Tbsp of milk. Whisk gently with a fork until well combined and no lumps remain. Adding milk will make the eggs extra moist and tender.
Step 5
Add about half of the sautéed potatoes and onions to the egg mixture and stir gently. Also, add the chopped green onions. The fresh aroma of the green onions will complement the eggs beautifully.
Step 6
Spread the remaining sautéed potatoes and onions evenly across the bottom of the pan. If the pan seems dry, add a little more cooking oil.
Step 7
Pour the prepared egg mixture evenly over the potatoes and onions in the pan. Gently tilt the pan to ensure the egg mixture spreads evenly to the edges.
Step 8
Reduce the heat to very low. Once the edges of the eggs begin to set, cover the pan with a lid and cook for about 5-7 minutes. When the eggs are about 2/3 cooked, carefully flip the frittata using a spatula to brown the other side. If flipping is difficult, you can place a large plate over the pan, invert the pan to transfer the frittata onto the plate, and then slide it back into the pan to finish cooking.
Step 9
Finally, tear the slice of cheddar cheese into pieces and sprinkle it evenly over the top of the frittata. Cover the pan again and cook for a short while until the cheese is melted. The added cheesiness will make it even more delicious.
Step 10
Carefully transfer the well-cooked potato frittata to a cutting board. Slice it into desired portions and enjoy warm. It makes an excellent meal when served with a side salad.
