  • Gimbap seaweed sheets – 2 sheets

  • Eggs – 2

  • Sesame oil – 1 Tbsp
  • Toasted sesame seeds

Cooking Instructions

Step 1

First, let’s make the soft egg omelet that will add to the gimbap’s flavor. Crack 2 eggs into a bowl and whisk them gently with a fork until smooth. Add a pinch of salt to eliminate any eggy smell and season it.

Step 2

Heat a non-stick pan and add about two swirls of cooking oil. Pour the whisked egg mixture into the pan over low heat. It’s crucial to maintain low heat to prevent the egg from burning.

Step 3

When the edges of the egg omelet start to cook and you can see the top surface firming up, carefully flip it using a spatula. Cook the other side for about 30 seconds, then turn off the heat. Overcooking can make the omelet tough.

Step 4

Place the cooked egg omelet on a cutting board. To ensure a beautiful cross-section when the gimbap is sliced, roll it up tightly (like a sushi roll) and then slice it into thin strips, about 0.5 cm thick.

Step 5

Slicing the egg omelet thinly is key to achieving a neat and attractive cross-section when you cut the gimbap. This step makes your gimbap look professionally made and appealing.

Step 6

Transfer about 1.5 servings of warm cooked rice into a mixing bowl. Season with two pinches of salt and add 1 tablespoon of sesame oil for a rich aroma. Sprinkle with toasted sesame seeds and mix gently with a rice paddle, ensuring the rice grains don’t clump together.

Step 7

Rinse the fresh lettuce leaves thoroughly under running water. After rinsing, shake off excess water by hand or pat them dry with a paper towel. Any remaining moisture can make the gimbap soggy.

Step 8

Rinse the well-fermented aged kimchi lightly under cold water to reduce some of its sourness and saltiness. Squeeze out as much water as possible from the kimchi with your hands. Excess water can dilute the gimbap’s flavor.

Step 9

All the components for your gimbap are now ready! Get ready to roll; the combination of fresh vegetables and delicious seasonings will create a truly delightful gimbap.

Step 10

Lay a gimbap seaweed sheet on a bamboo mat or clean surface. Spread a moderate amount of the seasoned rice evenly over the seaweed, covering it thinly and widely. Make sure to spread rice to the very edges of the seaweed to prevent the fillings from spilling out when rolled.

Step 11

Layer the sliced egg omelet, the well-squeezed aged kimchi, and the spicy dried shredded squid on top of the rice. Finish by placing the fresh lettuce leaves on top. You can arrange the filling ingredients in any order you prefer.

Step 12

To help the gimbap hold its shape, lightly moisten the edge of the seaweed sheet with water before rolling. This will help the roll seal securely. Roll the gimbap tightly from the bottom upwards.

Step 13

Roll the second gimbap with the remaining ingredients. Once both rolls are complete, brush a little sesame oil over the top of the gimbap. This adds a beautiful sheen, enhances the aroma, and improves the overall flavor.

Step 14

Hold the gimbap firmly with your hands (using the mat if needed) to prevent it from breaking. Using a sharp knife, slice the gimbap into bite-sized pieces, about 1.5 to 2 cm thick. For a cleaner cut, you can lightly dampen the knife with water. Your delicious Egg and Spicy Dried Shredded Squid Gimbap is ready!

Step 15

You can create such a wonderful and tasty gimbap using common ingredients like eggs and kimchi from your refrigerator. Make your mealtime enjoyable with this visually appealing and incredibly flavorful special gimbap!
