Pork belly and shiitake mushrooms are a match made in heaven! I’ll share my Shiitake Mushroom and Pork Belly Stir-fry recipe that my son praised for its smoky aroma.
Ingredients
- Pork belly 400g
- Shiitake mushrooms 5 pcs
- Green onion 1/2 stalk
- Soy sauce 1 Tbsp
- Oyster sauce 1 Tbsp
- Sesame seeds (toasted) a pinch
Cooking Instructions
Step 1
First, prepare the shiitake mushrooms. Trim off the tough stems. Instead of washing them under running water, gently wipe the surface of the mushrooms with a damp paper towel. Washing them directly can cause them to absorb too much water, which affects their flavor. Once cleaned, slice the mushrooms into relatively thick pieces, about 0.5 cm thick. They cook quickly, so thicker slices will provide a better texture.
Step 2
Next, roughly chop about half a stalk of green onion. I’m using frozen green onion here, but fresh is perfectly fine too. The green onion not only helps to remove any porky odor but also becomes wonderfully sweet and flavorful when stir-fried in the rendered pork fat.
Step 3
Heat a pan over medium-high heat, then add the pork belly and start cooking it. Be cautious as it may splatter oil.
Step 4
Once the pork belly is slightly cooked and has rendered some fat, cut it into bite-sized pieces (about 3-4 cm). Continue to cook until both sides are golden brown and crispy.
Step 5
When the pork belly is adequately cooked and has released a good amount of fat, add the chopped green onions to the pan. Stir-fry them together with the pork belly. The aroma of the green onions being sautéed in the pork fat is truly delightful, and they become wonderfully sweet.
Step 6
Once the pork belly is nearly done, push the ingredients to one side of the pan to create space. Pour 1 Tbsp of soy sauce into the empty space and let it bubble up slightly. Then, mix it with the pork belly and stir-fry to coat. This step helps to deepen the flavor and impart a wonderful smoky essence. My kids absolutely loved the smoky scent when they tasted it!
Step 7
After coating the pork belly with the soy sauce mixture, add the sliced shiitake mushrooms to the pan. Give everything a quick toss to combine.
Step 8
Now, add 1 Tbsp of oyster sauce. Increase the heat to high and quickly stir-fry everything together. The oyster sauce will add a wonderful umami boost.
Step 9
There’s no need to overcook the mushrooms once they are added. Shiitake mushrooms cook very quickly, even from residual heat. Turn off the heat as soon as they appear slightly wilted to prevent them from becoming watery.
Step 10
