  • 2 Fresh Shiitake Mushrooms
  • 1 Tbsp Minced Garlic
  • 3 Cups Rice (measured with a paper cup), washed
  • 1/3 stalk Scallion

Special Sauce for Rice Bowl
  • 2 Tbsp Hontsuyu (Japanese soup base)
  • 2 Tbsp Soy Sauce
  • 1 Tbsp Fish Sauce

Cooking Instructions

Step 1

First, prepare the rice, the foundation of your rice bowl. Wash 3 cups of rice (measured with a paper cup) thoroughly 2-3 times. Rinsing removes excess starch, ensuring a fluffy texture. Drain the washed rice in a colander.

Step 2

Let’s make the special sauce that will define the flavor of your rice bowl. In a bowl, combine 2 Tbsp Hontsuyu, 2 Tbsp Soy Sauce, and 1 Tbsp Fish Sauce. Mix well. Pour this sauce over the drained rice and gently toss to coat each grain of rice with the seasoning. (Letting the rice soak for 20 minutes at this stage will allow the flavors to penetrate deeply, resulting in a much tastier rice.)

Step 3

Now, let’s prepare the vegetables that will elevate your rice bowl. Trim the stems off the 2 fresh shiitake mushrooms and slice them thinly. Finely chop the 1/3 stalk of scallion for garnishing.

Step 4

It’s time to cook the delicious beef brisket. Place 200g of beef brisket in a preheated pot or pan and stir-fry over medium-low heat. Once the beef has rendered some fat, add 1 Tbsp of minced garlic and continue to stir-fry until the garlic is fragrant. Be careful not to burn the garlic.

Step 5

Don’t discard the flavorful fat rendered from the beef! Lightly pat the cooked beef with a paper towel to remove excess grease and set it aside on a plate. Sautéing the shiitake mushrooms in this beef fat will enhance their flavor. Stir-fry the mushrooms until they are lightly browned.

Step 6

Now it’s time to cook the rice. Place the rice, which has been soaking in the sauce for 20 minutes, into the pot. Add water, maintaining a 1:1.2 ratio of rice to water. (For example, if you used 3 cups of rice, add 3.6 cups of water.) The water level should be just slightly above the rice.

Step 7

Let’s cook the rice perfectly. Cover the pot with a lid and cook over medium-low heat for 15 minutes. You’ll notice the water start to boil and the rice begin to cook. After 15 minutes, turn off the heat completely and let the rice steam, covered, for 10 minutes. This resting period allows the moisture to distribute evenly, resulting in moist and delicious rice.

Step 8

The steeping time has finally ended! Open the lid and gently fluff the rice with a spatula. Be careful not to mash the rice grains. Fluffing the rice makes it look and taste even better.
