- 1.5 bowls of cooked rice (preferably warm or day-old)
- 3 large eggs
- 1 stalk of green onion (scallion)
- A little canola oil or vegetable oil
Seasonings & Others
- 1/2 Tbsp anchovy sauce (or fish sauce)
- 1 Tbsp oyster sauce
- 2/3 Tbsp sesame oil
- A pinch of toasted sesame seeds (optional)
- 1/2 Tbsp anchovy sauce (or fish sauce)
- 1 Tbsp oyster sauce
- 2/3 Tbsp sesame oil
- A pinch of toasted sesame seeds (optional)
Cooking Instructions
Step 1
First, prepare the green onion, which is key to adding fantastic aroma to your fried rice. Wash 1 stalk of green onion thoroughly and mince it finely. Since the ingredient list is short, let’s start by getting our aromatics ready!
Step 2
Next, heat a wok or a large frying pan over medium heat. Add a generous amount of canola oil and toss in the minced green onions.
Step 3
Cook the green onions over low heat, stirring occasionally, until they are fragrant and slightly softened, but not burnt. This process is crucial for infusing the oil with the sweet, savory essence of the scallions, creating a beautiful scallion oil base.
Step 4
Once the scallions are fragrant, push them to one side of the wok, creating a clear space in the center. Pour the 3 eggs into the cleared space and let them cook for a few seconds until the edges begin to set.
Step 5
Gently scramble the eggs in the center of the wok with a spatula or chopsticks. Cook them until they are about 80% done – still slightly moist and creamy. We don’t want to overcook them at this stage.
Step 6
When the eggs are mostly cooked, gently break them up and mix them with the cooked scallions that were pushed to the side. Combine them lightly.
Step 7
Add the 1.5 bowls of cooked rice to the wok. Use your spatula to break up any clumps of rice and gently toss everything together, ensuring the rice is evenly distributed with the egg and scallions.
Step 8
Now, it’s time for seasoning! Add the 1/2 tablespoon of anchovy sauce and 1 tablespoon of oyster sauce. Increase the heat to medium-high and stir-fry vigorously for about 1-2 minutes, ensuring the sauce coats every grain of rice. Taste and adjust seasoning if needed, perhaps with a pinch of salt or a dash more soy sauce.
Step 9
Turn off the heat. Drizzle in the 2/3 tablespoon of sesame oil for a final touch of aroma and flavor. Give it a gentle toss to combine everything. Your delicious Chinese-style egg fried rice is ready to serve! Garnish with toasted sesame seeds if desired.
