Step 1

Let’s start by preparing the base for our delicious braised pomfret: the broth. In a pot, add water, dried kelp, and anchovies, then bring to a boil. Once boiling, remove the kelp. Continue to simmer for about 5 more minutes for the anchovies, then strain the broth. While the broth is simmering, clean and cut the silver pomfret into bite-sized pieces. Peel the potato and cut it into large chunks. Add the cut potatoes to the boiling broth and cook for about 5 minutes until slightly tender. Once the potatoes are partially cooked, add the prepared silver pomfret to the pot.

Step 2

While the pomfret is cooking, prepare the additional ingredients. Thickly slice the onion. Slice the garlic thinly. Cut the green chilies diagonally, and chop the carrot into desired shapes. Arrange the sliced onion, garlic, carrot, and green chilies evenly over the pomfret. Pour the pre-mixed seasoning sauce (gochugaru, soy sauce, sugar, mirin, black pepper, grated ginger) over the vegetables and fish to ensure they are well coated.

Step 3

Now, cover the pot with a lid and continue to simmer over low heat for another 5 minutes. This step allows the flavors to meld together and the fish to become tender. Lift the lid to check; when the sauce is reduced to a nice consistency and all ingredients are cooked through, your delicious braised silver pomfret is ready!
