- 2 Onions
- 1 knob Ginger (thinly sliced)
- 200ml Soju (or cooking wine)
BBQ Sauce Ingredients
- 100ml Soy Sauce
- 1.5 Tbsp Sweet Paprika Powder (Gochugaru)
- 1.5 Tbsp Smoked Paprika Powder
- 5 Tbsp Oligodang (Korean corn syrup)
- 2 Tbsp Sugar
- 2 Tbsp Minced Garlic
- 1 tsp Ginger Juice
- 5 Bay Leaves
- 2/3 Tbsp Nutmeg
- Pinch of Black Pepper
- 800ml Water
- 100ml Soy Sauce
- 1.5 Tbsp Sweet Paprika Powder (Gochugaru)
- 1.5 Tbsp Smoked Paprika Powder
- 5 Tbsp Oligodang (Korean corn syrup)
- 2 Tbsp Sugar
- 2 Tbsp Minced Garlic
- 1 tsp Ginger Juice
- 5 Bay Leaves

Start by soaking the pork back ribs in cold water for 3 hours to remove any blood. If the water becomes very red during this time, it’s a good idea to change it to fresh water for a cleaner taste.

In a pot, bring enough water to generously cover the ribs to a boil. Add the thinly sliced ginger and soju to the boiling water. Cook on high heat for 5 minutes. This step is crucial for removing any gamey odor.

After blanching, transfer the ribs to cold water and rinse them thoroughly. It’s important to carefully wash away any impurities or bone fragments stuck to the ribs for a pristine finish.

Thinly slice the onions as finely as possible. This will allow them to melt into the sauce as it cooks, adding a wonderful sweetness and depth of flavor.

Layer the thinly sliced onions at the bottom of a large pot. Then, place the cleaned pork back ribs on top. Pour all the prepared BBQ sauce ingredients over the ribs.

Cover the pot with a lid and bring it to a boil over high heat. Once it starts boiling vigorously, reduce the heat to medium-low and let it simmer gently for about 1 hour and 15 minutes, or until the sauce has thickened considerably. Slow simmering is key to tender ribs!

While simmering, gently shake the pot occasionally or spoon the simmering sauce over the ribs to ensure they cook evenly and absorb all the delicious flavors. This basting technique prevents sticking and enhances the sauce’s richness.

Pay extra attention during the last 10 minutes of cooking! The sauce can thicken quickly and may burn if not monitored carefully.
