Rice Cooker Ingredients

Cooking Instructions
Step 1
First, prepare the main ingredient for the topping, thinly sliced pork belly, the rice for cooking, the onion to be stir-fried with it, and the chopped green onions, sesame seeds, and black sesame seeds for garnish. Adjust the amount of rice and water according to your rice cooker model.
Step 2
To remove any gamey smell from the pork belly, lay out paper towels, place the pork belly slices on top, and sprinkle evenly with 2 tablespoons of cooking wine. Cover with another layer of paper towels and let it sit for about 5 minutes to allow the blood to be absorbed. Afterward, remove the paper towels.

Thinly slice the onion. Finely chop the green onions, preparing them for garnish.

Now, let’s make the sauce to add savory flavor to the rice bowl. In a bowl, combine 2 tablespoons of soy sauce, 1 tablespoon of oyster sauce (or feel free to use 2 tablespoons of mentsuyu!), 1/2 tablespoon of sugar, 1.5 tablespoons of mirin, and 1/2 tablespoon of minced garlic. Stir well to combine the ingredients and set the sauce aside.

Add the sliced onions and the drained pork belly to the prepared sauce. Gently mix them together by hand, ensuring the sauce coats everything evenly. Let it marinate for a short while, about 10 minutes, to allow the flavors to meld.

For the rice, it’s best to rinse it quickly in a sieve under running water. Discard the first water, as it may contain impurities, and rinse about two to three more times until the water runs clear. Drain the rinsed rice thoroughly.
