Crispy Napa Cabbage Salad Ingredients
  • 1/4 head Napa cabbage
  • 2 Tbsp Soy Sauce (Guk-ganjang)
  • Sesame seeds (to taste)
  • A little Sesame oil

Spicy & Sweet Radish Salad Ingredients

  • 1 Tbsp Fish Sauce (Myeolchi Aekjeot)
  • 1 Tbsp Minced Garlic
  • 1 Tbsp Rice Vinegar (Gam-sikcho)

Chewy Fish Cake Stir-Fry Ingredients
  • 3 sheets Fish cake (eomuk)
  • 1/2 Onion
  • 2 Green chili peppers
  • 1 Red chili pepper
  • A little Carrot

Fish Cake Stir-Fry Sauce Ingredients
  • 2 Tbsp Soy Sauce (Jin-ganjang)
  • 3 Tbsp Water
  • 1 Tbsp Minced Garlic
  • 1 Tbsp Sugar
  • 1 Tbsp Sesame seeds
  • 1 Tbsp Sesame oil
  • 2 Tbsp Honey

Crispy Dried Anchovy Stir-Fry Ingredients
  • 100g Dried anchovies (small)
  • 10g Walnuts
  • 10g Sunflower seeds
  • 10g Pumpkin seeds
  • 3 Tbsp Rice syrup (Ssal Jocheong)
  • 2 Tbsp Water
  • 1 Tbsp Sesame seeds
  • 2 Tbsp Soy Sauce (Jin-ganjang)
  • 1 Tbsp Sesame oil
  • 2 Tbsp Mayonnaise

Cooking Instructions

Step 1

1. Making Crispy Napa Cabbage Salad: First, prepare 1/4 head of Napa cabbage. Blanch the cabbage in boiling water for about 1 minute, then immediately rinse it in cold water to cool it down. Squeeze out the excess water thoroughly and cut it into bite-sized pieces. Be careful not to over-blanch, or it will become mushy.

Step 2

In a bowl, gently mix the cut cabbage with 2 Tbsp Soy Sauce (Guk-ganjang), a sprinkle of sesame seeds, and a little sesame oil until well combined. This makes a delicious Napa cabbage salad. If it tastes bland, add a little more soy sauce.

Step 3

2. Making Spicy & Sweet Radish Salad: Wash 100g of radish, peel it, and then julienne it thinly and finely. It’s best not to remove too much moisture from the julienned radish.

Step 4

In a bowl, combine the julienned radish with 1 Tbsp Fish Sauce (Myeolchi Aekjeot), 1 Tbsp minced garlic, 1 Tbsp Rice Vinegar (Gam-sikcho), a sprinkle of sesame seeds, and a little sesame oil. Mix gently with your hands until everything is well coated. This creates a refreshing spicy and sweet radish salad. You can add a little sugar if you prefer it sweeter.

Step 5

3. Making Chewy Fish Cake Stir-Fry: Cut 3 sheets of fish cake into bite-sized pieces. Julienne 1/2 onion and a small amount of carrot into similar sizes. Two green chili peppers and one red chili pepper will add a nice spicy kick and color to the dish. Remove the seeds and chop them finely.

Step 6

Heat a pan and combine 2 Tbsp Soy Sauce (Jin-ganjang), 3 Tbsp water, and 1 Tbsp minced garlic to make the sauce. Once the sauce starts to boil, add the cut fish cake, onion, and carrot. Stir-fry them together until the fish cake absorbs the sauce.

Step 7

Just before you finish cooking, add the chopped chili peppers and stir-fry briefly. Turn off the heat, then drizzle in 2 Tbsp honey, 1 Tbsp sesame seeds, and 1 Tbsp sesame oil. Mix everything well for a delicious fish cake stir-fry.

Step 8

4. Making Crispy Dried Anchovy Stir-Fry: Prepare 100g of small dried anchovies. Also, prepare nuts like 10g of walnuts, 10g of sunflower seeds, and 10g of pumpkin seeds. Remove any debris from the anchovies using a sieve. Dry-roast the anchovies in a pan over low heat for about 5 minutes to get rid of any fishy smell.

Step 9

Add 2 Tbsp Soy Sauce (Jin-ganjang), 3 Tbsp Rice syrup (Ssal Jocheong), and 2 Tbsp water to the roasted anchovies. Bring to a simmer over medium heat. Cook until the sauce has reduced to a glaze, stirring the anchovies and sauce together.

Step 10

Add the prepared nuts and stir-fry with the anchovies for another 1-2 minutes. Turn off the heat, then add 1 Tbsp sesame seeds, 1 Tbsp sesame oil, and 2 Tbsp mayonnaise. Mix everything thoroughly. The mayonnaise helps prevent the anchovies from becoming too hard and adds a smoother texture.
