Delicious Stir-Fried Aged Kimchi (Mugeunji Bokkeum)
Creative Ways to Use Sour Kimchi: Stir-Fried Aged Kimchi
I was hesitant to eat this aged, sour kimchi, but stir-frying it made it incredibly delicious! This recipe is perfect for transforming leftover aged kimchi into a flavorful side dish.
Main Ingredients
- 1/4 head aged kimchi (Mugeunji)
- 1/2 onion
Seasoning
- 5 Tbsp olive oil
- 1 Tbsp plum extract (maesilcheong)

Cooking Instructions
Step 1
Rinse the aged kimchi thoroughly under running water. To reduce its sourness, try to leave a little bit of the red pepper powder on it, and squeeze out as much water as possible. Cut the rinsed kimchi into bite-sized pieces (about 5cm long).
Step 2
Heat 3 tablespoons of olive oil in a pan over medium-low heat. Add the rinsed and squeezed aged kimchi. Stir-fry for about 5 minutes until the kimchi softens and is evenly cooked.
Step 3
Once the kimchi is partially cooked, add the remaining 2 tablespoons of olive oil to the pan.
Step 4
Add the thinly sliced onion and stir-fry it with the kimchi until the onion becomes translucent. The sweetness from the onion will complement the kimchi’s flavor.
Step 5
Turn off the heat. Stir in 1 tablespoon of plum extract, ensuring it’s evenly mixed with the kimchi and onion. The aged kimchi is already quite salty, so no additional seasoning is needed. This stir-fried aged kimchi is savory and tender, making it a fantastic side dish for rice or even a great accompaniment to drinks.
