Main Ingredients
- 180g well-fermented kimchi, chopped into bite-sized pieces
- 100g smoked duck breast, sliced into bite-sized pieces
- 50g onion, thinly sliced
- 2 Tbsp water
- 1 Tbsp cooking oil
- A little minced Cheongyang chili pepper (optional, for extra spice)
- A little minced red chili pepper (optional, for color and flavor)
Seasoning
- 1 Tbsp multi-purpose seasoned soy sauce (mat-ganjang)
- A pinch of sesame seeds (for garnish)
- 1 Tbsp multi-purpose seasoned soy sauce (mat-ganjang)
- A pinch of sesame seeds (for garnish)
Cooking Instructions
Step 1
First, prepare the main ingredients by chopping the kimchi and smoked duck into bite-sized pieces. For the kimchi, you can remove some of the inner core before chopping for a cleaner stir-fry. If the smoked duck has excess fat, gently pat it with a paper towel to remove it.
Step 2
Peel and thinly slice the onion. Slicing it thinly helps release its sweetness and creates a softer texture when stir-fried.
Step 3
Heat 1 tablespoon of cooking oil in a pan over medium heat. Add the sliced onions and stir-fry until they become translucent and fragrant, releasing a sweet aroma. This step is crucial for developing flavor.
Step 4
Once the onions are translucent, add the chopped kimchi to the pan. Stir-fry together with the onions, allowing the kimchi to cook and develop its characteristic tangy flavor.
Step 5
When the kimchi is partially cooked, add 2 tablespoons of water. Break up any clumps of kimchi and stir-fry until the water has mostly evaporated. Cooking until the liquid is reduced helps to meld the flavors of all the ingredients.
Step 6
Now, add the smoked duck slices and 1 tablespoon of the multi-purpose seasoned soy sauce. Stir-fry quickly with the kimchi and onions. The savory aroma of the smoked duck will further enhance the dish. Adjust the amount of seasoned soy sauce according to your taste.
Step 7
Finally, add the minced Cheongyang chili pepper and red chili pepper, if using. Stir-fry briefly one more time to incorporate them. The addition of chili peppers adds a welcome kick of spice and a vibrant color. Turn off the heat and sprinkle with sesame seeds for a nutty finish.
Step 8
Transfer the delicious smoked duck and kimchi stir-fry to a serving dish. Present it attractively, and you’ll have a wonderful side dish ready to be enjoyed with a bowl of hot rice!
