Today, I’m sharing a recipe for Hot Pot White Broth Kalguksu, perfect for a hearty and warming meal during the colder seasons. It’s a fantastic way to enjoy a satisfying meal in just one bowl, blending the rich, mild flavor of hot pot broth with chewy kalguksu noodles.

Ingredients
  • Hao Chi Hot Pot White Broth Sauce 90g (Use sauce from a specialty hot pot store)
  • Kalguksu noodles 120g (Fresh or dried noodles can be used)
  • Onion 30g
  • Shiitake mushrooms 2
  • Zucchini 30g
  • Carrot 40g
  • Green onion 10g
  • Crown daisy (Shungiku) a little (for garnish)
  • Green onion a little (for garnish, thinly sliced diagonally)
  • Chili pepper a little (for garnish, seeds removed and thinly sliced)

Cooking Instructions

Step 1

First, prepare the vegetables that will add flavor to the kalguksu. Finely chop the green onion. Thinly julienne the carrot and onion. Remove the stems from the shiitake mushrooms and slice them thinly. Slice the zucchini into thin half-moon shapes. Having all your ingredients prepped makes the cooking process much smoother.

Step 2

Now, let’s create the delicious broth base. Pour 600-700ml of water (or use store-bought broth, chicken broth, etc., for a deeper flavor) into a pot and bring it to a boil over high heat. Once the water is boiling vigorously, add the Hao Chi Hot Pot White Broth Sauce (90g) and stir until the sauce is fully dissolved. Bring it back to a boil to allow the broth flavors to meld.

Step 3

Add all the prepared vegetables and the kalguksu noodles to the pot. Gently stir to prevent the noodles from sticking together, and cook until the noodles are fully done. The cooking time for noodles can vary depending on the brand, so check the package instructions or test the noodles for doneness. (Approx. 3-5 minutes)

Step 4

Ladle the deliciously cooked Hot Pot White Broth Kalguksu into a deep serving bowl. Garnish generously with fresh crown daisy, diagonally sliced green onion, and thinly sliced chili peppers.
