  • 700ml Water (or broth)
  • 1 medium Onion
  • 1 medium Potato
  • 1/2 medium Carrot

Seasoning & Other
  • 2 Tbsp Cooking Oil (or butter)

Cooking Instructions

Step 1

First, let’s prepare the vegetables, the stars of our curry. Wash the potato thoroughly and cut it into bite-sized pieces according to your preference. If you have children, cutting them smaller will make them easier to eat. The potato adds a wonderful softness to the curry.

Step 2

Next, chop the carrot into pieces similar in size to the potatoes. Carrots add a touch of sweetness and a vibrant color, making the curry even more appealing.

Step 3

Cut the pork into manageable pieces. Pre-cut pork for curry is convenient if you have it. The savory juices released from the pork as it cooks will deepen the curry’s flavor profile.

Step 4

Slice or dice the onion. As onions cook, their natural sweetness intensifies, playing a crucial role in enhancing the curry’s umami and overall taste.

Step 5

Heat a large pot or wok over medium heat and add 2 tablespoons of cooking oil. The oil is ready when it shimmers slightly.

Step 6

Add the cut pork to the hot pot and stir-fry until the exterior is browned and cooked through. The irresistible aroma of the sautéing pork will surely whet your appetite.

Step 7

Once the pork is partially cooked, add the harder vegetables first. Potatoes take a bit longer to cook, so adding them after the pork allows them to cook evenly. Following this order ensures all ingredients are cooked perfectly.

Step 8

After briefly sautéing the potatoes, add the carrots and continue to stir-fry. Carrots also require some cooking time, so they are best added at this stage.

Step 9

Finally, add the onions and stir-fry. Onions cook relatively quickly, so it’s best to add them after the other vegetables have started to soften. Cook until the onions turn translucent.

Step 10

Stir-fry all the ingredients over medium heat for about 5-7 minutes. This process allows the flavors to meld beautifully and a delicious aroma to develop. Sautéing helps to bring out the natural sweetness of the vegetables and enrich the curry’s taste.

Step 11

Once the ingredients are well sautéed, pour in 700ml of water. It’s a good idea to refer to the water quantity recommended on your curry powder packaging. Keep in mind that the sauce will thicken as it simmers, so starting with a slightly generous amount of water is advisable.

Step 12

When the water comes to a boil, add the curry powder. To ensure a smooth curry without lumps, it’s helpful to dissolve the curry powder in a little water before adding it to the pot.

Step 13

Reduce the heat to low and stir continuously, ensuring the ladle scrapes the bottom of the pot to prevent sticking. Keep stirring gently until the curry reaches your desired thick consistency. Your delicious curry rice is now ready! Serve it hot over a bed of fluffy rice and enjoy.
