A quick and satisfying lunch solution using a bowl of leftover rice. This recipe features tender crab sticks and sweet, caramelized onions, creating a delightful fried rice that’s loved by all ages. It’s simple enough to make anytime!
Main Ingredients
- 1 bowl of cooked rice (warm it up beforehand for best results)
- 1/2 pack of imitation crab meat (about 50-60g)
- 2 large eggs
- 1/2 medium onion
- A little cooking oil

Step 1
First, crack the two eggs into a bowl. Whisk them thoroughly with a fork or whisk until the yolk and white are well combined. These beaten eggs will be used to make scrambled eggs.
Step 2
Peel and finely dice the half onion. Finely dicing the onion ensures a pleasant texture and harmonious blend in the fried rice.
Step 3
Shred or finely chop the imitation crab meat. Aim for a texture that resembles shredded crab meat.

Heat a little cooking oil in a frying pan over medium heat. Pour in the beaten eggs. As the eggs begin to set, gently stir them with chopsticks to create fluffy scrambled eggs. Cook them to bite-sized pieces without breaking them too much. Once cooked, transfer the scrambled eggs to a separate plate.

Add a bit more cooking oil to the same pan. Add the finely diced onion and stir-fry over medium heat until the onion becomes translucent and releases a sweet aroma. Sautéing the onions well brings out their natural sweetness, significantly enhancing the fried rice’s flavor.

Once the onions are translucent, add the shredded imitation crab meat. Stir-fry together with the onions for about 1-2 minutes, allowing the crab meat to warm through and meld with the flavors of the onion.

Return the prepared scrambled eggs to the pan. Gently mix them with the sautéed onions and crab meat. Stir just enough to combine the ingredients well.

Now, add the warmed cooked rice to the pan. Stir-fry everything together with a spatula, ensuring the rice is evenly mixed with the other ingredients. Press down gently with the spatula to break up any clumps of rice. Once the rice is fried to a slightly fluffy consistency, add the soy sauce and oyster sauce. Stir-fry for about 1 minute until the flavors are well incorporated. Finally, drizzle in the sesame oil for a fragrant finish and turn off the heat.
