For a 20x8x5cm Mousse Ring
  • 12 Lotus Biscoff cookies
  • 200g cream cheese, softened to room temperature
  • 60g granulated sugar
  • 2 large eggs, at room temperature
  • 3 Tbsp all-purpose flour
  • 150g heavy cream
  • 15g lemon juice or vanilla extract (adjust to your preference)

Cooking Instructions

Step 1

This recipe is so straightforward that we’re skipping the ingredient photo! Feel free to adjust the ingredient quantities based on the size of your mousse ring. We doubled the recipe to make two cheesecakes.

Step 2

Your first step is to process all ingredients except the Lotus cookies in a food processor or finely chop them with a knife until thoroughly combined. Aim for a smooth, uniform mixture – this is key to a creamy cheesecake texture!

Step 3

Line your prepared mousse ring with parchment paper. Then, carefully arrange the Lotus cookies on the bottom of the ring, overlapping slightly to create a solid base for your cheesecake.

Step 4

Pour the prepared cream cheese mixture over the Lotus cookie base. Gently tap the mold or use a spatula to spread the batter evenly across the surface.

Step 5

Now, carefully and artfully arrange another layer of Lotus cookies on top of the batter. Place them gently to avoid disturbing the mixture underneath.

Step 6

Wrap the outside of the mousse ring with aluminum foil. Preheat your oven to 180°C (350°F) for 10 minutes. Then, reduce the temperature to 170°C (340°F) and bake for approximately 40 minutes. After 40 minutes, remove the foil and continue baking for another 20 minutes, or until the top is golden brown. (Baking time may vary depending on your oven.)

Step 7

You might notice the cheesecake looks slightly puffed up right after baking, which can seem imperfect. Don’t worry! Allow it to cool slightly, then refrigerate it thoroughly. Once chilled, it will settle into a beautifully smooth and perfect cheesecake.
