How to Make a Super Simple and Delicious Curry Potato Ham Stir-Fry

- 1/2 can of luncheon meat (approx. 150g)

Step 1
First, prepare half of the canned luncheon meat. Slice the ham thinly and lengthwise, similar to how you would julienne vegetables for stir-frying. This slicing method ensures the seasoning distributes evenly and improves the texture. Heat a frying pan over medium heat, add the sliced ham, and stir-fry until lightly golden brown. It’s important to fry the ham until it releases enough of its own fat, which adds to the flavor.
Step 2
Wash the potatoes thoroughly and peel them. Then, cut them into thin, long strips, similar in thickness to the sliced ham. To ensure the potatoes are cooked through and don’t burn on the outside, it’s recommended to pre-cook them. If using an air fryer, place the potato strips in the basket and cook at 180°C (350°F) for about 20 minutes. If using a conventional oven, bake them at 200°C (400°F) for 15-20 minutes. (Adjust cooking time based on potato size and thickness.) Once the potatoes are partially cooked by the air fryer or oven, they are ready to be stir-fried with the ham.
Step 3
Add the pre-fried ham and the partially cooked potato strips to the frying pan. Stir-fry over medium-low heat. Once the ingredients are slightly cooked and beginning to meld together, it’s time to add the star of the show: curry powder. Prepare about 1-2 tablespoons of curry powder, but feel free to add more if you enjoy a spicier flavor or a stronger curry aroma. Reduce the heat to low before adding the curry powder.
Step 4
After adding the curry powder, it’s crucial to stir-fry thoroughly to ensure the curry coats all the ingredients evenly. If the ingredients start sticking together or the curry powder clumps, don’t worry! Simply add a very small amount of cooking oil (about 1/2 Tbsp) or 1-2 tablespoons of water. Adding too much water can dilute the flavor, so it’s best to add it in small increments while stirring.
