Main Ingredients
  • 300g prepared Petasites (Meowui) stems (trimmed for easy eating)
  • 1/3 Korean chili pepper (remove seeds and finely chop)
  • 1/3 onion (thinly sliced into matchsticks)
  • 5cm white part of a leek (thinly sliced into matchsticks)
  • 1 tsp toasted sesame seeds (for garnish)
  • 1/2 tsp sesame oil (adds a nutty aroma)

Perilla Seed Dressing
  • 5 Tbsp ground perilla seeds (use generously for rich nuttiness)
  • 1 Tbsp soup soy sauce (for umami flavor)
  • 1/3 Tbsp minced garlic (for a subtle garlic aroma)

Cooking Instructions

Step 1

First, prepare the thicker parts of the petasites stems. Bring a pot of water to a rolling boil with 1 tablespoon of salt. Add the thicker stems and blanch for about 1 minute and 30 seconds.

Step 2

Then, add the thinner stem parts to the boiling water and continue to blanch for another 3 minutes and 30 seconds. This cooking time helps maintain the crisp texture of the petasites.

Step 3

Once blanched, remove the petasites from the hot water and rinse thoroughly under cold running water. If there’s any tough outer skin, peel it off. To remove any bitterness, soak the stems in cold water for 3 to 4 hours. (Ensure you have 300g of prepared stems.)

Step 4

Peel and thinly slice the onion into matchsticks. Thinly slice the white part of the leek into matchsticks as well. Finely chop the Korean chili pepper after removing the seeds. (Adjust the amount of chili pepper if you prefer it spicier.)

Step 5

Cut the prepared petasites stems into bite-sized pieces, about 5cm long. Cutting them to a manageable length will help the dressing coat them evenly and make them easier to eat.

Step 6

In a mixing bowl, combine the dressing ingredients: 5 tablespoons of ground perilla seeds, 1 tablespoon of soup soy sauce, and 1/3 tablespoon of minced garlic. Mix them lightly to create the dressing base.

Step 7

Add the prepared petasites, sliced onion, chopped chili pepper, and sliced leek to the bowl. Gently toss and mix everything together with your hands until the dressing is evenly distributed. It’s important to mix thoroughly to ensure every piece is coated.

Step 8

Finally, add 1 teaspoon of toasted sesame seeds and 1/2 teaspoon of sesame oil for that delicious nutty finish. Give it one last gentle toss, and your flavorful stewed petasites with perilla seeds is ready! You can enjoy it immediately or store it in the refrigerator for later.
