Cooking Instructions

Step 1

Let’s start making the “super simple” stir-fried water spinach, also known as Morning Glory. As the name suggests, it can be completed very easily.

Step 2

Check the contents of your meal kit. It includes two sauce packets, fresh water spinach, stir-fry onions, dried Vietnamese chili peppers, and sliced garlic to enhance the flavor.

Step 3

Heat a pan with 2 tablespoons of chili oil, then add the onions, sliced garlic, and dried chilies. Stir-fry until fragrant. This step will bring out the delicious aroma of the ingredients.

Step 4

Stir-fry for about 1-2 minutes until the vegetables are coated with the red hue of the chili oil. Avoid overcooking to maintain their crisp texture.

Step 5

Typically, water spinach is cut into two pieces, but I kept them whole, remembering how long they were in Morning Glory stir-fries. (Adjust the length as you prefer.) Next, add the sauce and stir-fry very quickly. Once the water spinach begins to wilt slightly, turn off the heat immediately. The residual heat is sufficient for cooking, and overcooking will cause it to lose its crispiness.

Step 6

The vibrant red of the chili peppers, the white of the onions and garlic, and the fresh green of the water spinach come together for a visually delightful dish. The deep umami from the fish sauce combined with the spiciness makes it incredibly addictive with rice! Although completed very simply with just the addition of chili oil from home, the taste is truly excellent. The crispness of the onions and the spicy-sweet flavor will keep you coming back for more. The unique aroma of the fish sauce adds even more depth to the flavor.
