Main Ingredients
  • 1/2 medium onion
  • 1/6 medium carrot
  • 1/3 package enoki mushrooms

Seasoning & Others
  • 1 Tbsp oyster sauce
  • 1/2 Tbsp soy sauce
  • 1 Tbsp plum extract
  • 1 Tbsp toasted sesame seeds
  • A little cooking oil

Cooking Instructions

Step 1

Prepare all the vegetable ingredients. Peel the onion and carrot, then slice them into thin strips. For the enoki mushrooms, trim the base and then separate the clump into 3-4 sections lengthwise; this helps the seasoning distribute evenly and cook better. (Optional) If you enjoy a bit of spice, prepare 1 Cheongyang chili pepper, remove the seeds, and slice it diagonally. This will add a pleasant heat.

Step 2

Heat about 1-2 tablespoons of cooking oil in a pan over medium-high heat. Once the pan is hot, add the sliced onions and carrots. Stir-fry them briskly over high heat. Cooking over high heat helps maintain the vegetables’ crispness and prevents them from becoming watery. Stir-fry for about 1 minute, or until the onions start to turn slightly translucent.

Step 3

Add the prepared enoki mushrooms and the diagonally sliced Cheongyang chili pepper (if using) to the pan. Next, pour in 1 tablespoon of oyster sauce and 1/2 tablespoon of soy sauce. Stir-fry quickly for about another minute until the ingredients are well combined. Adding the sauces just before finishing and stir-frying over high heat ensures the flavors coat the ingredients without becoming watery. Turn off the heat, then stir in 1 tablespoon of plum extract and 1 tablespoon of toasted sesame seeds until evenly distributed. Your delicious stir-fried onion and carrot is ready! Serve it over hot rice for a delightful meal.
