Introducing the ultimate side dish for a hearty meal, even in the sweltering heat: Dried Shrimp Stir-fry. When your refrigerator feels empty and worrying, homemade dried side dishes that you prepare with effort can be lifesavers for days to come. Today, I’ll share a recipe for dried shrimp stir-fry that you can whip up quickly using dried shrimp from your freezer, without spending too much time in front of the stove. It has a charm that makes you finish a bowl of rice in no time, achieving a deep, savory flavor with simple steps.
Ingredients
- Dried shrimp
- 2 Tbsp Soy sauce
- 1 Tbsp Cooking wine (Mirin)
- 1/2 Tbsp Sugar
- 1/2 Tbsp Minced garlic
- 2 Tbsp Chopped green onions
- 2 Tbsp Cooking oil
- 1 Tbsp Toasted sesame seeds
- 1/2 Tbsp Black sesame seeds
Cooking Instructions
Step 1
First, gently stir-fry the dried shrimp in a dry pan without any oil. This step helps remove any dust and enhances the shrimp’s nutty flavor. After stir-frying, sift through a fine-mesh sieve to remove any broken pieces for a cleaner finished dish.
Step 2
In a bowl, combine the soy sauce, cooking wine, sugar, minced garlic, and chopped green onions to make the sauce. (Although I unfortunately lost my recipe notes, based on measuring spoons, I estimate about 2 Tbsp soy sauce, 2 Tbsp green onions, 1 Tbsp cooking wine, 1/2 Tbsp sugar, and 1/2 Tbsp minced garlic. Feel free to adjust to your taste.)
Step 3
Heat 2 Tbsp of cooking oil in a pan over medium heat. Pour in the prepared soy sauce mixture and bring it to a simmer.
Step 4
Once the sauce starts to bubble, add the stir-fried dried shrimp. Mix well to ensure the shrimp are evenly coated with the sauce. The dried shrimp will absorb the sauce quickly, so stir continuously to prevent burning.
Step 5
Finally, sprinkle generously with toasted sesame seeds and black sesame seeds. Isn’t that incredibly easy? This delicious dried shrimp stir-fry is ready in no time. It’s the perfect side dish for rice, so be sure to try making it!
