Ingredients
- 150g Tofu (approx. 1/4 block)
- 1 pinch Salt
- 2 Eggs
- 2 Tbsp Curry Powder
- 5 Tbsp Cornstarch (or wheat flour/pancake mix)
- 4 Tbsp Cooking Oil
Cooking Instructions
Step 1
First, prepare the tofu. Cut the tofu into bite-sized pieces, about 1.5cm to 2cm thick. Cutting them too thin might cause them to break apart, so aim for a moderate thickness.
Step 2
Lightly pat dry the cut tofu pieces. Sprinkle a pinch of salt evenly on both sides to season. This step helps to remove any gamey smell from the tofu and adds flavor.
Step 3
In a separate bowl, crack the 2 eggs. Whisk them thoroughly with a fork or whisk until the stringy parts (chalaza) are broken up and the eggs are smooth. Creating a smooth egg batter is key.
Step 4
Add the 2 tablespoons of curry powder to the whisked eggs and mix well until there are no lumps. Adding curry powder deepens the flavor of the tofu and gives it an appetizing color. Ensure it’s mixed thoroughly without clumps.
Step 5
Place the 5 tablespoons of cornstarch on a wide plate. Coat the seasoned tofu pieces evenly on all sides with the cornstarch. Thoroughly coating with cornstarch ensures a crispy exterior when fried and helps the egg batter adhere well. Gently shake the tofu to remove any excess starch.
Step 6
Dip the cornstarch-coated tofu pieces into the prepared curry egg mixture, coating both sides well. Gently turn them to ensure the egg batter covers the tofu evenly.
Step 7
Heat about 4 tablespoons of cooking oil in a frying pan over medium heat. Carefully place the curry-egg-coated tofu pieces in the hot oil, arranging them in a single layer. Pan-fry until golden brown and crispy on one side, then flip and cook the other side until golden brown. They are ready when the exterior is crisp and the interior is heated through. Be mindful of the heat to prevent burning.
