Today, I’m sharing a special recipe for German-style potato pancakes made from wonderfully steamed potatoes! While inspired by Chef Baek Jong-won’s recipe, I’ve put my own spin on it to create a truly delicious dish. You’ll fall in love with their crispy exterior and tender, flavorful interior. With simple ingredients, anyone can easily follow along, so enjoy these delightful pancakes as a special snack or appetizer at home!
Main Ingredients
- 2 medium-sized steamed potatoes
- 1/4 onion, finely chopped
- 1/2 can (small size) low-sodium canned ham
- Pinch of salt
- Pinch of black pepper
Cooking Instructions
Step 1
Prepare the Potatoes: Start by preparing 2 steamed potatoes. I like to steam them in my rice cooker while cooking rice; a little bit of rice starch on the potatoes adds extra flavor! (Note: When steaming in the rice cooker, I steamed 4 potatoes and used about 2 of them for this recipe.)
Step 2
Degrease the Ham: We’re using low-sodium canned ham. To remove excess grease and any potential off-flavors, briefly blanch the ham in boiling water. This step ensures a cleaner taste in your potato pancakes.
Step 3
Make the Dough: It’s best to mash the steamed potatoes while they are still warm. Once mashed, add the chopped onion, salt, and pepper. Knead the mixture thoroughly with your hands until it forms a cohesive dough. Shape the dough into flat pancake forms. (Tip: You can also prepare a portion of the dough with ham and another portion without, if preferred.)
Step 4
Pan-Fry to Golden Brown: Heat a pan over medium heat and add a generous amount of oil. First, cook the potato pancakes without ham, frying them on both sides until golden brown and crispy. Cook over medium-low heat to ensure they cook through evenly. Then, cook the ham-filled pancakes in the same way until beautifully golden brown.
