Ingredients (Serves 60)
- 2kg fresh cucumbers
- 500g crushed toasted sesame seeds
- 200g granulated sugar
- 100ml sesame seeds (for garnish/flavor)
- 50g seasoned salt (or to taste)
Cooking Instructions
Step 1
Start by preparing the fresh cucumbers. Wash them thoroughly and slice them diagonally about 0.5cm thick. Place the sliced cucumbers in a bowl and toss with half of the seasoned salt. Let them sit for 10 minutes to lightly pickle and release excess water. This step ensures the cucumbers remain delightfully crisp.
Step 2
Gently rinse the salted cucumbers under running water to remove excess salt. Squeeze them softly by hand to drain out as much water as possible. Be careful not to squeeze too hard, or the cucumbers might become mushy. Now, it’s time for the dressing. Add the drained cucumbers to a large bowl. Mix in the crushed toasted sesame seeds, granulated sugar, sesame seeds, and the remaining seasoned salt. Gently toss everything together with your hands until well combined. You’ll love the aromatic scent of sesame and the perfect balance of sweet and salty flavors.
Step 3
Finally, garnish the salad with finely chopped scallions for a beautiful finish. This crispy cucumber and nutty sesame salad is a fantastic side dish that pairs wonderfully with rice, or even serves as a light snack. It’s best enjoyed fresh, but it’s also delicious served chilled after being stored in the refrigerator!
