Main Ingredients
- 2 handfuls Tteokguk Tteok (rice cake soup slices, approx. 200g)
- 1/5 Onion (approx. 30g)
- 2 pieces Bell Pepper (approx. 20g)
- 3 Tbsp Kimchi (finely chopped)
- Shredded Mozzarella Cheese (to taste)
Cooking Instructions
Step 1
First, lightly rinse the Tteokguk Tteok (rice cake soup slices) under cold water to remove any dust. Drain them well in a sieve. Gently separate the rice cakes so they don’t stick together.
Step 2
Peel the onion and slice it very thinly or finely chop it. Remove the seeds from the bell pepper and dice it into small pieces as well. Finely chopping the vegetables helps them integrate well with the rice cakes and cook faster.
Step 3
In a wide pan or skillet, arrange the separated Tteokguk Tteok in a single layer, forming a round shape at the bottom. This will be your pizza crust.
Step 4
Evenly spread the chopped onion and bell pepper over the rice cakes. Then, add the finely chopped kimchi on top. The kimchi will add a delicious spicy and savory flavor to your pizza.
Step 5
Now, reduce the heat to low. Cover the pan and let it cook slowly until the rice cakes soften and the vegetables are lightly cooked. This should take about 5-7 minutes. Be careful not to use high heat, as it can burn the rice cakes.
Step 6
Once the edges of the rice cakes start to turn golden brown, drizzle some grapeseed oil around the perimeter of the pan. This step will make the edges of the rice cakes extra crispy and delicious. (Olive oil or other vegetable oils can also be used.)
Step 7
Generously sprinkle the shredded mozzarella cheese over the toppings. Feel free to add more cheese if you love it!
Step 8
Adjust the amount of kimchi and cheese according to your preference. Add more kimchi for extra spiciness or more cheese for a richer, savory taste.
Step 9
Cover the pan again and continue to cook on low heat for another 2-3 minutes, allowing the cheese to melt completely and bind all the ingredients together. Watch for the cheese to become bubbly and melted.
Step 10
A simple way to check if your rice cake pizza is done is to see if the rice cakes around the edge are soft and chewy, and if the pizza slides easily when you gently shake the pan. The inviting aroma is also a good indicator!
Step 11
Turn off the heat and remove the lid. It’s time to plate! Place a large serving plate over the pan. Carefully hold the plate and the pan together, then swiftly invert them. Your rice cake pizza should now be beautifully presented on the plate. Inverting carefully will help maintain its shape. Enjoy your delicious creation!
