This dish is remarkably easy to make, requiring only quail eggs and onions besides the curry base. Ingredients
- 300g peeled quail eggs
- 2 onions
- 4 curry roux blocks (approx. 100g)
- 600ml water
- 3 Tbsp cooking oil
Cooking Instructions
Step 1
First, prepare the 300g of peeled quail eggs. Rinse them briefly under running water and drain any excess moisture. Set aside.
Step 2
Peel and wash the 2 onions. Slice them into medium-thick strips, about 0.5cm wide. This thickness will provide a pleasant texture in the curry.
Step 3
Heat 3 Tbsp of cooking oil in a pot over medium-low heat. Add the peeled quail eggs and stir-fry them slowly. Be cautious: high heat can cause the quail eggs to burst, so medium-low heat is key to achieving a nice golden brown color without scorching.
Step 4
Once the quail eggs are lightly browned, remove them from the pot and set aside. In the same pot, add the sliced onions. Increase the heat to medium-high and sauté the onions until they turn a rich brown color. Caramelizing the onions deeply enhances the curry’s natural sweetness and depth of flavor.

Return the fried quail eggs to the pot with the caramelized onions. Pour in 600ml of water. Bring the mixture to a boil over high heat.

As soon as the water starts boiling, skim off any foam that rises to the surface for a clearer broth. Reduce the heat to medium, add the 4 curry roux blocks, and stir gently until the blocks dissolve completely, creating a smooth, thick sauce.

Simmer the curry until it reaches your desired consistency. If it’s too thin, continue simmering for a few more minutes. If it’s too thick, you can add a little more water to adjust.
