Cooking Instructions

Step 1

First, wash the bok choy thoroughly. Bring a pot of water to a boil and blanch the bok choy for just about 30 seconds. Be careful not to overcook it, as it will become mushy and lose its satisfying crunch.

Step 2

Immediately after blanching, rinse the bok choy under cold water to cool it down. Then, gently squeeze out as much excess water as possible with your hands. Leaving too much water will dilute the dressing and affect the flavor.

Step 3

Now it’s time to mix everything together. In a bowl, combine the squeezed bok choy with 0.5 Tbsp of doenjang, 0.5 Tbsp of gochugaru, 1 Tbsp of sesame oil, 0.5 Tbsp of minced garlic, 0.5 Tbsp of minced scallion, and a pinch of sesame seeds. (All measurements are based on a standard Korean rice spoon.)
