I once saw a Western chef make these, and now they’ve become a huge trend in Korea! Seeing them all over social media, I decided to make them my own way, focusing on simplicity and enhanced flavor. Potatoes pair wonderfully with creamy, sour flavors, so I’m sharing a widely loved sauce. Leaving the skin on makes them extra crispy and nutty. I find smaller potatoes taste better! Seasoning with salt is crucial to bring out the potato’s natural sweetness, even when served with sauce. Dipping a piece generously into the sauce and taking a bite is pure bliss! I highly recommend this dish.
Main Ingredients
- 3 Potatoes (small size recommended)
- Olive oil, as needed
- Salt, to taste
- Black pepper, to taste
Creamy Yogurt Sauce (White Sauce)
- 1 Tbsp Mayonnaise
- 1 Tbsp Plain Yogurt
- 1 Tbsp Oligodang (or honey/agave syrup)
- Pinch of black pepper
- Pinch of dried parsley flakes (optional)
Sweet & Spicy Sriracha Sauce (Red Sauce)
- 1 Tbsp Mayonnaise
- 1/4 Tbsp Sriracha sauce
- 1/4 Tbsp Oligodang (or honey/agave syrup)
- 1 Tbsp Mayonnaise
- 1 Tbsp Plain Yogurt
- 1 Tbsp Oligodang (or honey/agave syrup)
- Pinch of black pepper
- Pinch of dried parsley flakes (optional)
Sweet & Spicy Sriracha Sauce (Red Sauce)
- 1 Tbsp Mayonnaise
- 1/4 Tbsp Sriracha sauce
- 1/4 Tbsp Oligodang (or honey/agave syrup)
Cooking Instructions
Step 1
Wash the potatoes thoroughly. It’s best to leave the skin on for extra crispiness and a richer flavor.
Step 2
Place the potatoes in a pot and add enough water to cover about one-third of them.
Step 3
Cover the pot with a lid. If using plastic wrap, pierce several holes in it with a fork before covering. (Alternatively, you can steam them).
Step 4
Microwave on high for 10 minutes. Adjust the time based on the size of your potatoes.
Step 5
Check for doneness by inserting a skewer or fork; it should slide in easily.
Step 6
Carefully press down on the warm potato using the flat bottom of a cup to flatten it.
Step 7
Gently press until flattened. Be careful not to press too hard, or the potato might break apart.

Drizzle generously with olive oil and season with salt and black pepper.

Bake in an air fryer at 175°C (350°F) for 15 minutes, or until golden brown and crispy. Cooking times may vary depending on your air fryer model.

While the potatoes are baking, let’s prepare the sauces.

For the Yogurt Sauce: Combine 1 Tbsp mayonnaise, 1 Tbsp plain yogurt, and 1 Tbsp oligodang. Mix well. Add a pinch of black pepper and parsley flakes for extra flavor, if desired.

For the Sriracha Sauce: Mix 1 Tbsp mayonnaise, 1/4 Tbsp sriracha sauce, and 1/4 Tbsp oligodang. This sauce offers a delightful sweet and spicy kick that complements the potatoes perfectly.
