- 2kg fresh bean sprouts
- 1kg firm fried tofu (aburaage), thinly sliced
- 2 large green onions (scallions)
- 1 carrot

Cooking Instructions
Step 1
First, thoroughly wash the bean sprouts under running water. Bring a pot of water to a rolling boil. Add the washed bean sprouts and blanch for exactly 1 minute. Be careful not to overcook them, as this will diminish their crispiness! Immediately drain the blanched bean sprouts and rinse them under cold water. Squeeze out any excess water. This step is key to maintaining their crunchy texture.
Step 2
Thinly slice the fried tofu into strips, about 0.5cm thick and elongated. Slicing them this way helps the seasoning to penetrate better, making the dish even more flavorful.

Finely mince the green onions, including the white and green parts. Thinly julienne the carrot. In a large bowl, combine the blanched and drained bean sprouts, sliced fried tofu, minced green onions, and julienned carrot. Add the minced garlic, sesame seeds, sesame oil, and salt.
