Crispy and Savory Buckwheat Vegetable Pancake
Make Crispy and Delicious Vegetable Pancakes with Leftover Ingredients!
Transform any leftover vegetables in your fridge into a wonderfully crispy and flavorful pancake. This recipe offers a delightful texture, enhanced by the use of buckwheat flour and tapioca starch.
Main Ingredients
- 1 handful of soybean sprouts
- 1 pack of enoki mushrooms
- 10 perilla leaves (kkaennip)
- A little bit of carrot
Cooking Instructions
Step 1
First, rinse the soybean sprouts thoroughly under running water and drain them well. Roughly chop them into bite-sized pieces. Avoid chopping them too finely, as this can diminish their texture. Aim for a substantial size.
Step 2
Julienne the carrot thinly. Trim the roots of the enoki mushrooms and either tear them into smaller strands or chop them. Stack the perilla leaves, roll them up tightly, and then slice them thinly into shreds. Your vegetable preparation is now complete.
Step 3
In a large bowl, combine 1 cup of buckwheat flour, 2 tablespoons of tapioca starch, 1 fresh egg, and 1 teaspoon of sea salt. Gradually pour in 150ml of cold water while whisking to create a smooth batter with no lumps. Be mindful of the consistency; if it’s too watery, the pancake might tear.
Step 4
Add all the prepared vegetables – soybean sprouts, enoki mushrooms, carrot, and perilla leaves – to the batter bowl.
Step 5
Using a spatula or spoon, gently mix the batter with the vegetables until they are evenly coated. Ensure the vegetables are well distributed and not clumped together.
Step 6
Heat a pan over medium heat and add a generous amount of cooking oil. Ladle about half a cup of the batter onto the hot pan and spread it out thinly. Fry until golden brown and crispy on both sides. Cooking over medium heat allows the inside to cook through thoroughly.
Step 7
Once cooked, cut the vegetable pancake into desired pieces and serve with a dipping sauce. This results in a wonderfully crispy exterior and a soft interior – the perfect vegetable pancake. Enjoy it while it’s warm!
