Seasoning and Dressing
- 1/2 tsp coarse salt (for salting cucumbers)
- 2 tsp soy sauce (adjust quantity if using low-sodium soy sauce)
- 2 pinches of salt (to taste)
- 1/2 Tbsp gochugaru (Korean chili flakes, for color and spice)
- 1/2 Tbsp minced garlic (enhances flavor!)
- 1 Tbsp sesame oil (for a nutty finish)
- A sprinkle of toasted sesame seeds (for garnish and nutty taste)
- 1/2 tsp coarse salt (for salting cucumbers)
- 2 tsp soy sauce (adjust quantity if using low-sodium soy sauce)
- 2 pinches of salt (to taste)
- 1/2 Tbsp gochugaru (Korean chili flakes, for color and spice)
- 1/2 Tbsp minced garlic (enhances flavor!)
- 1 Tbsp sesame oil (for a nutty finish)
- A sprinkle of toasted sesame seeds (for garnish and nutty taste)
Cooking Instructions
Step 1
Wash the cucumbers thoroughly. Rubbing them vigorously with coarse salt removes impurities and enhances their crispness. Afterwards, you can peel them thinly using a peeler or create stripes for a more attractive presentation. Slice them into bite-sized pieces.
Step 2
Place the sliced cucumbers in a bowl. Thinly slice the onion and add it to the bowl. Finely mince the chili pepper after removing the seeds and add it. (If you prefer less spice, you can omit the chili pepper or reduce the amount.)
Step 3
Now it’s time to add all the seasonings. Add the soy sauce, salt, gochugaru, minced garlic, and sesame oil to the bowl with the cucumbers and vegetables. We’ll sprinkle the toasted sesame seeds on top at the end.
Step 4
Using your hands or chopsticks, gently mix all the ingredients and seasonings until well combined. Be careful not to mash the cucumbers. Toss them evenly. Taste and add a tiny pinch more salt if needed. Finally, generously sprinkle with toasted sesame seeds to finish. Your crispy and delicious cucumber salad is ready!
