Cooking Instructions
Step 1
Select fresh sweet potato stems. Peel off the tough outer skin thoroughly. Blanch them in boiling water with a little salt for about 3-5 minutes until tender. Rinse the blanched stems under cold water and squeeze out any excess moisture. (Tip: Be careful not to overcook, or they will become mushy!)

Cut the blanched and squeezed sweet potato stems into bite-sized pieces (about 5cm). Thinly slice the onion. Finely chop the scallions (or the white part of the leek). Remove the seeds from the chili peppers and slice them diagonally.

In a large bowl, combine the prepared sweet potato stems, sliced onion, chopped scallions, and sliced chili peppers. Now, get ready to add all the seasoning ingredients.
