Step 1

Hello everyone! Today, we’re going to make a wonderful stir-fried dish with sweet potato stems, a star vegetable of the summer season. They have a fantastic crispy texture and a delicious savory flavor, making them a perfect side dish for rice or for packing in lunchboxes. It’s so easy to follow, so let’s get cooking together!

Step 2

First, you’ll need to peel the tough outer skin from the sweet potato stems. Removing the skin will make them much more tender and pleasant to eat. If it’s difficult to peel with your fingers, you can gently scrape off the skin with a knife.

Step 3

After peeling, rinse the sweet potato stems thoroughly under running water. Then, bring a pot of water to a boil with a pinch of salt. Blanch the stems for just about 1-2 minutes. It’s important to only ‘lightly’ cook them, as overcooking will make them mushy. After blanching, immediately rinse them under cold water to stop the cooking process and cool them down.

Step 4

Heat a pan with a little perilla oil. Add the blanched sweet potato stems. Now, let’s add the seasonings: 1 tsp minced garlic, 1 tbsp soy sauce, 1/2 tsp doenjang, and 1 tsp sugar. Stir-fry quickly to combine everything. The doenjang adds a wonderful umami depth, and the sugar balances the flavors. For an extra nutty flavor, you can add about 1 tablespoon of roasted soybean powder (konggaru) at this stage.

Step 5

Continue to stir-fry for another 1-2 minutes, allowing the flavors to meld together. Once well combined, turn off the heat and sprinkle with sesame seeds. And there you have it – a delicious and crispy stir-fried sweet potato stem dish! It’s incredibly tasty served over a bowl of warm rice.
