Main Ingredients
- 100g dried anchovies (choose plump, silver-colored ones for best flavor)
- 1 Tbsp sesame oil
- 1 tsp sesame seeds
- 1 Tbsp corn syrup or rice syrup (adjust sweetness to your preference)
Cooking Instructions
Step 1
First, prepare the anchovies. Removing the heads and guts can reduce the fishy taste. (This is optional, but recommended for a cleaner flavor.)
Step 2
Place the 100g of dried anchovies in a dry, preheated pan. Stir-fry over medium-low heat for 2-3 minutes. This process removes any fishy smell and moisture, making the anchovies nuttier and crispier.
Step 3
After stir-frying, sift the anchovies through a sieve to remove any powder or small broken pieces. This step ensures a cleaner finish to your stir-fry and removes any bitter-tasting bits.
Step 4
Return the sifted anchovies to the pan over low heat. Add 1 Tbsp of sesame oil and 1 Tbsp of corn syrup. Stir-fry carefully, ensuring they don’t burn. The syrup will coat the anchovies, adding shine and a touch of sweetness.
Step 5
Finally, add 1 tsp of sesame seeds and stir gently for another moment. The nutty aroma of the sesame seeds will further enhance the flavor of the anchovy stir-fry.
