Tonkatsu Ingredients
- Pork loin 150g (thick cut)
- 5 fresh romaine lettuce leaves
- 40g canned sweet corn
- 30g pickles (chopped or thinly sliced)
- 2 fresh eggs
- 100g cooked rice (1 bowl)
Frying and Seasoning Ingredients
- 5 Tbsp rich tomato ketchup
- 3 Tbsp smooth honey mustard
- 1/2 Tbsp deep-flavored Worcestershire sauce
- 3 Tbsp sweet corn syrup
- Pinch of salt to enhance flavor
- Pinch of pepper for aroma
- 20g all-purpose flour for coating
- 30g breadcrumbs for golden crust
- 5 Tbsp rich tomato ketchup

Cooking Instructions
Step 1
First, soak the fresh romaine lettuce leaves in cold water for about 5 minutes to crisp them up. Drain well and cut them into appealing pieces for serving.

Season the thick-cut pork loin evenly with salt and pepper. This step helps to tenderize the meat and infuse it with flavor. Let it marinate for about 5 minutes.

Coat the marinated pork loin first with a thin layer of all-purpose flour, then dip it into beaten eggs, ensuring it’s fully covered. Finally, press breadcrumbs firmly onto the cutlet to create a good crust. Pressing the breadcrumbs helps them adhere better during frying.

Heat frying oil to medium heat. Carefully place the prepared tonkatsu into the hot oil and fry for about 3-5 minutes per side, until it’s a beautiful golden brown and crispy. Be mindful not to fry at too high a heat, which can burn the outside before the inside is cooked.

Now, let’s make the tonkatsu sauce. In a small saucepan, combine 5 Tbsp tomato ketchup, 3 Tbsp honey mustard, 1/2 Tbsp Worcestershire sauce, and 3 Tbsp corn syrup. Stir well and simmer gently over low heat until the sauce thickens slightly and the flavors meld together. Taste and adjust with a little sugar or vinegar if desired.
