Seasoning Ingredients
  • Homemade Doenjang (Korean soybean paste) 1 Tbsp (heaping)
  • Sesame seeds 1/3 Tbsp
  • Sesame oil 2 drizzles (approx. 1 tsp)

Cooking Instructions

Step 1

Wash the bok choy thoroughly. Cut larger heads into 4 pieces and smaller ones into 2 pieces for easy handling.

Step 2

Bring a pot of water to a rolling boil. Add 1/2 Tbsp of coarse salt to the boiling water. Adding salt helps maintain the vibrant green color and crisp texture of the bok choy.

Step 3

Blanch the prepared bok choy in the boiling water for about 30 seconds to 1 minute, just until slightly tender but still crisp. Be careful not to overcook. Immediately transfer the blanched bok choy to cold or running water to stop the cooking and cool it down. Gently squeeze out excess water by hand. Cut the bok choy into bite-sized pieces.

Step 4

In a mixing bowl, combine the squeezed bok choy with the seasoning ingredients: 1 Tbsp of homemade doenjang, 1/3 Tbsp of sesame seeds, and 2 drizzles of sesame oil. Gently toss and mix the ingredients with your hands until well combined. Avoid mixing too vigorously, as this can bruise the greens and release excess moisture.
