Making Nutritious Pumpkin Porridge at Home
Introducing a smooth and sweet pumpkin porridge recipe that utilizes pumpkin, known for its excellent benefits in preventing adult diseases and combating aging. It’s perfect for a quick breakfast or a satisfying snack.
Main Ingredients
- 2 medium-sized pumpkins
- 3-4 Tbsp glutinous rice flour
Seasoning
- 2-2.5 Tbsp sugar (adjust to taste)
- 1-2 tsp salt (adjust to taste)
- 2-2.5 Tbsp sugar (adjust to taste)
- 1-2 tsp salt (adjust to taste)
Cooking Instructions
Step 1
Wash the pumpkins thoroughly. Place them in a plastic bag with the stem end down and microwave for 5 minutes. This will slightly cook the pumpkin, making it much easier to remove the seeds and peel.
Step 2
Once removed from the microwave, let the pumpkins cool slightly. Then, cut them in half, remove all the seeds, peel the skin, and chop them into large, bite-sized pieces (about 3-4 cm).
Step 3
In a blender, combine the chopped pumpkin with 1 cup (200ml) of water and blend until smooth. Adjust the amount of water based on the pumpkin’s moisture content and your desired consistency, as it shouldn’t be too thick. It’s okay if there are a few small lumps.
Step 4
Pour the blended pumpkin into a pot, add another 1 cup (200ml) of water, and bring to a boil over medium heat. Once boiling, reduce the heat to low and simmer for about 5 more minutes. Add 1-2 tsp of salt during this time for seasoning. Salt helps enhance the natural sweetness of the pumpkin.
Step 5
In a separate bowl, combine 3-4 Tbsp of glutinous rice flour with 1-1.5 cups (200-300ml) of cold water. Roughly mix it with chopsticks or a whisk, leaving some small lumps. These lumps will act like ‘ongsimi’ (small dumplings), adding a delightful texture to the porridge.
Step 6
Gradually pour the glutinous rice flour mixture into the simmering pumpkin porridge in a circular motion using a ladle. Stir well with a spatula to prevent lumps from forming. Once it comes to a boil again, cover the pot for 1-2 minutes to let it steam and thicken.
Step 7
Finally, add 2-2.5 Tbsp of sugar to adjust the sweetness and add more salt if needed, according to your preference. Stir until the sugar is dissolved and simmer for a little longer. Your delicious pumpkin porridge is ready! Serve warm and enjoy.
