Creamy and Savory Potato Soup
Homemade Recipe for a Cozy Meal
I’ve made this potato soup recipe multiple times myself after finding the original measurements a bit unclear, and I’ve settled on this method which I find easy to follow. My mother-in-law absolutely loved it when I served it to her, so I decided to make a batch large enough to share with her again this time, doubling the recipe for us to enjoy together. Main Ingredients
- 3 medium potatoes
- 1 Tbsp salt (for boiling potatoes)
- 3/4 medium onion
- 4 cups milk (approx. 800ml)
- 1 Tbsp salt
- Pepper to taste
- 1/2 Tbsp butter
Cooking Instructions
Step 1
First, wash and peel 3 medium potatoes. Cut them into four pieces each. Place the cut potatoes in a pot and add enough water to cover them completely. Add 1 tablespoon of salt to the water. Bring to a boil over high heat, then reduce to medium heat and simmer for 15-20 minutes, or until the potatoes are very tender when pierced with a fork. Once cooked, drain the potatoes and let them cool slightly for about 5 minutes. This makes them easier to mash.
Step 2
While the potatoes are boiling, thinly slice about 3/4 of a medium onion. Melt 1/2 tablespoon of butter in a pan over medium-low heat. Add the sliced onions and sauté until they become translucent and fragrant, about 5 minutes. Let the sautéed onions cool down for about 5 minutes as well. Sautéing the onions adds a wonderful depth of sweetness and flavor to the soup.
Step 3
Combine the slightly cooled boiled potatoes and the sautéed onions in a blender. Pour in 4 cups (approximately 800ml) of cold milk. Blend on high speed until the mixture is completely smooth and creamy, with no lumps remaining. If ingredients get stuck on the sides, stop the blender, scrape them down, and continue blending until perfectly smooth.
Step 4
Pour the blended potato mixture into a saucepan. Place it over low heat. Add 1 tablespoon of salt and pepper to your taste. Gently stir and simmer for about 5 minutes over low heat. Simmering allows the flavors to meld together beautifully and enhances the soup’s creamy texture.
Step 5
The finished soup might be thicker than you expect. If you plan to serve it immediately, add warm water a little at a time until you reach your desired consistency. If you add more water, taste and adjust the seasoning with a pinch more salt if needed. I usually make a larger batch, store it in airtight containers in the refrigerator, and reheat individual portions as needed. To reheat, I add a little more water to thin it to my liking and microwave it. For an extra rich and delicious flavor, try adding a slice of American cheese when you reheat it!
