Ingredients
  • 300g mixed color cherry tomatoes
  • 20g red onion
  • 5g fresh basil leaves
  • 4 tbsp extra virgin olive oil
  • 3 tbsp white wine vinegar
  • 1 tbsp unrefined sugar
  • 1 pinch pink salt
  • A pinch of whole black peppercorns

Cooking Instructions

Step 1

Start by removing the stems from 300g of your colorful cherry tomatoes. Wash them thoroughly under running water and pat them dry. Using a variety of colors will make the final dish visually stunning.

Step 2

Gently score the bottom of each tomato (opposite the stem side) with a shallow ‘X’ using a sharp knife. This little step makes peeling them so much easier later on.

Step 3

Boil some water using an electric kettle. Place the scored tomatoes in a heatproof bowl, ensuring they fit comfortably. Pour the boiling water over the tomatoes, making sure they are fully submerged. Let them sit for about 30 to 45 seconds, or until you notice the skins starting to loosen slightly.

Step 4

Immediately transfer the tomatoes from the hot water into an ice bath. This rapid cooling stops the cooking process and helps the skins peel off effortlessly.

Step 5

Once the tomatoes have cooled down enough to handle, gently peel the skin starting from the scored ‘X’. The skin should slip off easily, revealing the juicy flesh underneath. Set aside the peeled tomatoes.

Now, let’s prepare the marinade. In a mixing bowl, combine 1 tablespoon of unrefined sugar with 4 tablespoons of good quality extra virgin olive oil.
