Ingredients
- 2kg Pork Belly (for boiled meat)
- 1 Onion (cut into large pieces)
- A piece of Radish (cut into large pieces)
- 1 stalk Green Onion (mostly the white part, cut into large pieces)
- 5 Bay Leaves
- 1 Tbsp Doenjang (fermented soybean paste)
- 1 Liter Cola (Pepsi or Coca-Cola)
Seasoning (Optional)
- 1 Tbsp Saeujeot (fermented shrimp sauce, minced)
- 1 Cheongyang Pepper (finely chopped, for spiciness)
- A pinch of Sesame Seeds (for added nuttiness)

Cooking Instructions
Step 1
First, prepare 2kg of fresh, high-quality pork belly. Choose a cut with a good thickness and well-distributed fat for boiled meat. Soaking it in cold water for about 10 minutes to lightly remove blood will result in a cleaner taste.
Step 2
Prepare your cola. You can use either Pepsi or Coca-Cola; both work well. Cola is excellent at removing the gamey odor from pork and helps tenderize the meat, making it softer.
Step 3
Now, let’s get ready to boil. In a deep and large pot, place the pork belly. Add the large-cut onion, green onion stalk, bay leaves, and doenjang. Pour in enough water to cover the meat, then add 1 liter of cola. A good ratio is about 1/3 water to 2/3 cola. (Using cola along with water enhances the flavor and significantly helps remove odors compared to just water.)
Step 4
Cover the pot and bring it to a boil over high heat. Once it reaches a rolling boil, reduce the heat to medium and let it simmer gently for 40 to 50 minutes. To check if it’s done, pierce the thickest part of the meat with a chopstick. If it goes in smoothly without any pinkness, it’s perfectly cooked. (Adjust the cooking time based on the thickness of the meat and your stove’s heat.)
Step 5
Once the pork belly is fully cooked, carefully remove it from the pot and let it cool slightly. Then, pour off most of the cooking liquid, leaving just a little bit in the pot (not too much). Return the pork belly to the pot and let it simmer over low heat until the liquid becomes slightly reduced and coats the meat.
