Clean & Savory Sausage and Vegetable Stir-fry
How to Make a Simple and Light Sausage and Vegetable Stir-fry
Unlike the usual ‘Ssoya’ (sausage stir-fry), this version is refreshingly light and clean-tasting. Perfect for a simple yet nutritious meal.
Ingredients
- Sausage 2 cups (approx. 200-250g, your favorite kind)
- Garlic 3-4 cloves (minced or thinly sliced)
- Onion 1/4 medium (thinly sliced)
- Cabbage 1/4 small head (bite-sized pieces)
- Cherry tomatoes 5-6
- Olive oil 1 Tbsp
- Salt to taste
- Black pepper to taste
- Tomato sauce 2 Tbsp
- Parsley flakes for garnish
Cooking Instructions
Step 1
First, wash the cherry tomatoes and remove their stems. Blanch them in boiling water for about 30 seconds to 1 minute. Immediately transfer the blanched tomatoes to cold water to cool, then peel off the skins. If the tomatoes are large, cut them in half before using.
Step 2
Slice the sausages into bite-sized pieces. Briefly blanch the sausages in boiling water for about 1 minute. This step helps remove excess fat, making the dish lighter. Drain the blanched sausages well.
Step 3
Slice the onion thinly and cut the cabbage into bite-sized pieces. Thinly slice the garlic. (If using minced garlic, you can add it towards the end.)
Step 4
Heat 1 Tbsp of olive oil in a pan over medium-low heat. Add the sliced garlic and gently sauté until fragrant, taking care not to burn it. Once the garlic turns golden, proceed to the next step.
Step 5
Add the sliced onions, cabbage, and blanched sausages to the pan with the garlic. Increase the heat to medium and stir-fry until the vegetables are slightly tender. Season with salt and pepper to your taste. (Adjust salt if your sausages are already seasoned.)
Step 6
Once the vegetables and sausages are partially cooked, add the tomato sauce. Stir well to combine everything and cook for another 1-2 minutes. The tomato sauce will add a delicious sweet and tangy flavor.
Step 7
Transfer the finished sausage and vegetable stir-fry to a serving plate. Sprinkle with parsley flakes for a touch of color and aroma. Your delicious and healthy dish is ready to enjoy!
