  • A generous handful of fresh chives (approx. 50-70g)
  • 2 fresh eggs

Seasoning
  • 1 Tbsp oyster sauce (for added flavor)
  • 1 Tbsp sesame oil (for a nutty aroma)
  • A pinch of toasted sesame seeds (for garnish and texture)

Cooking Instructions

Step 1

First, thoroughly wash the fresh chives under running water. Make sure to rinse them well to remove any dirt or debris. Then, chop the chives into bite-sized pieces, about 3-4 cm long. Cutting them to a manageable size will make stir-frying easier.

Step 2

Crack the 2 fresh eggs into a clean bowl. Use a fork or chopsticks to beat the eggs thoroughly until the yolks and whites are completely combined. Ensuring the egg mixture is smooth is key to achieving a tender scrambled egg texture. Now, heat 1-2 tablespoons of cooking oil in a preheated pan over medium-high heat. Once the oil is hot, carefully pour in the beaten egg mixture.

Step 3

The eggs will start to cook as soon as they hit the hot pan. At this point, gently stir the eggs with chopsticks, moving from the inside of the pan outwards. The trick is to stir gently, just enough for the eggs to form soft curds that lift easily onto the chopsticks, rather than scrambling them vigorously. Cook the eggs only until they are about 70-80% done to maintain a tender texture; avoid overcooking them until they become firm.

Step 4

Once the eggs are cooked to your desired consistency, immediately turn off the heat. It’s important to utilize the residual heat of the pan. With the heat off, add the prepared chives and 1 tablespoon of oyster sauce to the pan. Gently mix everything with a spatula or chopsticks until the chives wilt slightly and the sauce is evenly coated on the eggs and chives. Stir-frying briefly using only the residual heat will keep the chives crisp and the eggs tender.

Step 5

Finally, drizzle 1 tablespoon of sesame oil into the pan for a nutty aroma. Sprinkle a pinch of toasted sesame seeds on top. Give it one last gentle stir to combine the sesame oil and seeds. Your delicious and aromatic chives and egg stir-fry is now ready! Serve it over warm rice as a rice topping or enjoy it alongside other side dishes.
