  • 2 cups well-fermented yeolmu kimchi (approx. 200g), chopped
  • 1 cup kimchi broth from yeolmu kimchi (approx. 100ml)

Cooking Instructions

Step 1

First, let’s make the egg garnish. Crack 2 eggs into a bowl and whisk them thoroughly. Lightly grease a non-stick pan over low heat, then pour the whisked egg in a thin layer to create an egg crepe. Aim for a thin crepe, as it will look prettier when julienned.

Once the egg crepe has cooled slightly, roll it up tightly and julienne it into very thin strips. Thinly sliced strands will make for a more appealing garnish.

Now, let’s prepare the delicious bibim sauce. In a bowl, add 2 cups of chopped, well-fermented yeolmu kimchi. Pour in 1 cup of the yeolmu kimchi broth. Add 1 tablespoon of gochujang, 2 tablespoons of sesame oil, 2 tablespoons of sweet maesilcheong (or oligodang), and 1 tablespoon of toasted sesame seeds. Mix everything together thoroughly with a spoon to create the sauce. Taste and adjust the amount of gochujang or maesilcheong according to your preference.

Next, we’ll cook the noodles. Fill a pot with plenty of water for cooking the somen noodles (for 2 servings) and bring it to a rolling boil over high heat. Once the water is boiling vigorously, add the somen noodles.

As the noodles cook, they will start to foam and rise. At this point, add about 1 cup of cold water to the pot and let it boil again. Repeat this process of adding cold water and boiling 2-3 times. This technique, called ‘noodle temperature control,’ helps make the noodles chewier and more resilient.

Once the noodles are cooked, drain them in a colander. Immediately rinse them under cold running water or ice water. Rub the noodles gently with your hands while rinsing to remove excess starch, which will result in a firmer, chewier texture. After rinsing thoroughly, drain them well again, squeezing out any excess water.

Step 7

Finally, add the drained somen noodles to the prepared bibim sauce and gently mix them together. Toss the noodles with the sauce until they are evenly coated. Transfer the noodles to a serving bowl, and top generously with the julienned egg garnish. Your refreshing and delicious Yeolmu Bibim Guksu is ready! You can also add shredded cucumber or lettuce for extra freshness.
