How to Make Refreshing Chicken Breast Mustard Salad – A Perfect Summer Dish!
This is a recipe I created when I wanted to lose weight but still enjoy some soju! It turned out incredibly delicious and is an affordable yet satisfying dish. Perfect for a light meal or an appetizer.
Main Ingredients
- 1 block chicken breast (thawed if frozen)
- 1/4 onion
- 1/3 cucumber
- 1/2 bell pepper (use a colorful one for presentation)
- 1/2 carrot
- 10 perilla leaves (깻잎)
Mustard Dressing
- 2 Tbsp prepared mustard (연겨자)
- 3 Tbsp sugar
- 3 Tbsp soy sauce
- 0.5 Tbsp salt
- 0.5 Tbsp minced garlic
- A pinch of toasted sesame seeds
- 3 Tbsp vinegar
- 2 Tbsp prepared mustard (연겨자)

Cooking Instructions
Step 1
If using frozen chicken breast, thaw it beforehand. Making shallow cuts on the chicken breast will shorten the cooking time. If you prefer not to boil, you can also cook it in the microwave! (e.g., about 3 minutes per 100g).
Step 2
Thinly slice the onion and soak it in cold water for about 10 minutes to remove its sharp flavor. This keeps it crisp while making it easier to eat.
Step 3
Peel the cucumber using a turning motion and remove the seedy core. This helps prevent excess water and improves texture. (You can discard the core.)
Step 4
Julienne the bell pepper and carrot into similar thin strips as the cucumber. Thinly sliced vegetables blend better and are easier to eat.

Wash the perilla leaves, pat them dry, and then finely shred them.

Arrange the prepared vegetables attractively on a large serving plate. Using a variety of colors makes the dish visually appealing. (Alternatively, you can use a slightly deep bowl and mix everything with the dressing.)

Now, let’s make the star of this dish: the mustard dressing! Save this golden ratio, you won’t regret it. In a bowl, combine 2 Tbsp prepared mustard, 3 Tbsp sugar, 3 Tbsp soy sauce, 0.5 Tbsp salt, 0.5 Tbsp minced garlic, and 3 Tbsp vinegar. Whisk everything together until well combined.

Once all ingredients are mixed, you’ll have a rich and appetizing mustard dressing.
