- 100g fresh whelk meat
- 200g bean sprouts
- 1 tsp sesame seeds
- 1 stalk green onion
- 100mL water

- 2 Tbsp fine gochugaru (Korean chili powder)
- 1.5 Tbsp soy sauce
- 1 Tbsp minced garlic
- 1 Tbsp oyster sauce
- 1 Tbsp cornstarch
- 4 Tbsp water
- 1 Tbsp sesame oil
- 2 Tbsp fine gochugaru (Korean chili powder)

Cut the green onion into approximately 5cm lengths. Finely chop some of the green parts of the onion to use as a garnish later for a more visually appealing dish.

Use pre-blanched fresh whelk from the market, or if using whole whelks, steam them until cooked, then extract the meat, rinse under cold water, and slice into bite-sized pieces, about 0.7cm thick. Fresh whelk offers a richer flavor and chewier texture compared to canned versions, which tend to be sweeter. We highly recommend using fresh, domestic whelk for the best taste experience.

In a bowl, combine 2 Tbsp of fine gochugaru, 1.5 Tbsp of soy sauce, 1 Tbsp of minced garlic, 1 Tbsp of oyster sauce, 1 Tbsp of cornstarch, 4 Tbsp of water, and 1 Tbsp of sesame oil. Mix thoroughly to create the delicious sauce.

In a large pan or pot, layer the ingredients: start with the bean sprouts at the bottom, then add 100mL of water, followed by the sliced green onions, and finally, arrange the whelk meat on top.

Once all ingredients are arranged, begin cooking over high heat. Once steam starts to rise, reduce the heat to medium and cover the pot. Let it steam for an additional 7 minutes. It’s best to keep the lid on to ensure the bean sprouts cook properly. After 7 minutes, pour the prepared sauce evenly over the ingredients.

Since the sauce contains cornstarch, stir continuously after adding the sauce to prevent sticking and ensure even distribution. Maintain medium-high heat, but avoid burning the bottom. Once the sauce is well incorporated and coats the ingredients, garnish with sesame seeds and the finely chopped green onions. You’ll be surprised at how easily this dish comes together!
