Recommended Home-Style Dish: Enjoy a Rich and Flavorful Meal with Sweet Corn and Spam Curry Rice
Instead of simply boiling spam in curry, this special recipe involves finely dicing the spam, pan-frying it until golden brown and slightly crispy, and adding it at the end. This method enhances the savory flavor and chewy texture. Adding sweet, popping kernels of sweet corn further elevates the curry to a richer and more complex taste. Introducing a truly addictive Spam and Corn Curry Rice that will have you finishing your bowl in no time!
Key Ingredients
- Spam (200g can)
- 1 potato (medium-sized)
- 1 onion (medium-sized)
- 1/2 carrot
- 1 cup sweet corn kernels (frozen or canned)
- 100g curry roux (your preferred flavor)
- 3.5 cups water (approx. 700ml)
- 1 tbsp cooking oil
Cooking Instructions
Step 1
First, prepare the stars of your curry rice: 1 can (200g) of Spam, 1 medium potato, 1 medium onion, and 1/2 carrot. Wash all vegetables thoroughly.
Step 2
Finely dice the Spam into bite-sized cubes. To achieve a cleaner taste and remove excess saltiness and oil, you can blanch the diced Spam in boiling water for a minute or place it in a colander and pour hot water over it. This step helps the Spam integrate better with the other ingredients in the curry.
Step 3
Heat a non-stick pan over medium heat without any oil. Add the diced Spam and sauté until it’s golden brown and slightly crispy on all sides. Frying the Spam this way brings out its savory aroma and enhances its texture.
Step 4
Dice the potato, onion, and carrot into slightly larger cubes than the Spam and place them in a pot. Ensuring a consistent size for the vegetables will help them cook evenly.
Step 5
Add 1 tablespoon of cooking oil to the pot with the vegetables. Sauté over medium-low heat until the vegetables become slightly translucent. Pre-sautéing the vegetables deepens their sweetness and overall flavor.
Step 6
Now, add 1 cup of sweet corn kernels to the pot and stir-fry with the vegetables. If using frozen corn, you can add it directly without thawing. Stir-frying the corn adds a delightful sweetness and a satisfying ‘pop,’ making the curry rice even more delicious. (If using fresh corn, you can sauté it along with the potatoes.)
Step 7
Pour 3.5 cups (approximately 700ml) of water into the pot with the sautéed ingredients. Bring to a rolling boil over high heat. Prepare to adjust the heat once it starts boiling.
Step 8
Once the water is boiling evenly, reduce the heat to medium-low. Cook until the potatoes are tender enough to be easily pierced with a fork. When the potatoes are cooked through, add the 100g of curry roux.
Step 9
Stir gently with a spatula or ladle to ensure the curry roux dissolves completely and doesn’t form lumps. Continue to cook until the curry is smooth and lump-free.
Step 10
Once the curry reaches your desired thickness, add the pre-fried Spam and stir well to combine. Simmer for a short while longer to allow the flavors of the Spam to meld into the curry. Your delicious Spam and Corn Curry Rice is now ready to be enjoyed with a bowl of warm rice!
