  • 5-6 fresh shiitake mushrooms
  • 150g beef
  • 1/2 onion
  • 1 green chili pepper

  • 1 Tbsp cooking wine (mirin)
  • 1 tsp sesame oil
  • 1/2 tsp sugar

  • 2 Tbsp cooking oil
  • 1/2 Tbsp minced garlic
  • 1 Tbsp chopped green onion
  • 1 Tbsp oyster sauce

Cooking Instructions

Step 1

First, trim the tough stems off the shiitake mushrooms and rinse them clean. Slice them thinly on an angle, about 0.5cm thick. Peel the onion and slice it into thin strips of about 0.5cm thickness. Remove the stems from the green chili pepper, shake out the seeds, and slice it diagonally to match the thickness of the mushrooms. Preparing the ingredients nicely beforehand makes the cooking process smoother and the final dish more appealing.

Step 2

Drain any excess liquid from the beef and slice it into thin strips, about 0.5cm thick. Place the sliced beef in a bowl. Add all the marinade ingredients (1 Tbsp soy sauce, 1/2 tsp minced garlic, 1 Tbsp cooking wine, 1 tsp sesame oil, 1/2 tsp sugar, a pinch of black pepper) and gently mix with your hands. Let it marinate for about 10 minutes. Marinating the beef makes it more tender and allows the flavors to penetrate deeply.

Step 3

Heat a frying pan over medium heat and add 2 Tbsp of cooking oil. Add 1/2 Tbsp of minced garlic and 1 Tbsp of chopped green onion. Stir-fry for about 30 seconds until fragrant, creating a garlic and onion-infused oil. Be careful not to burn them; the key is to cook until the aroma is released.

Step 4

Once the fragrant oil is ready, add the marinated beef to the frying pan. Stir-fry for about 3 minutes, breaking up any clumps with chopsticks to ensure even cooking. Cook until the beef is browned and no longer pink.

Step 5

When the beef is partially cooked, add the sliced shiitake mushrooms, onion, and green chili pepper to the pan. Pour in 1 Tbsp of oyster sauce. Stir-fry over high heat for 1-2 minutes, allowing all the ingredients to meld together. It’s best to cook quickly to keep the vegetables crisp and prevent them from becoming too soft.

Step 6

Transfer the well-stir-fried beef and shiitake mushroom mixture to a serving plate. Sprinkle generously with sesame seeds for added flavor and aroma.
