This recipe combines the sweetness of winter radish with the nutritional benefits of sea grapes, creating a vibrant dish that stimulates your appetite. The perfect balance of sweet, sour, and spicy flavors makes it an ideal accompaniment to any meal.
Ingredients
- 1 bunch fresh sea grapes (miyeok)
- 1/3 Korean radish (mu)
- 1 stalk green onion (daepa)
- 1 Tbsp minced garlic
- 2 Tbsp tuna extract (chamchi-aek)
- 2 Tbsp plum extract (maesil-cheong)
- 1 Tbsp ginger extract (saenggang-cheong)
- 1 Tbsp oligosaccharide
- 1 Tbsp vinegar
- 3 Tbsp red pepper flakes (gochugaru)
- A pinch of sesame seeds
Cooking Instructions
Step 1
First, gently blanch the thoroughly washed sea grapes in boiling water for about 30 seconds to 1 minute. Be careful not to overcook, as they can become mushy.
Step 2
As soon as the sea grapes turn a vibrant green, immediately remove them from the boiling water and rinse them thoroughly under cold running water to cool them down completely. This step is crucial for maintaining their chewy texture.
Step 3
Peel and thinly julienne the Korean radish. In a bowl, combine the radish juliennes with about 1/2 tablespoon of salt and gently toss. Let it sit for about 30 minutes to draw out excess moisture. This process will make the radish extra crisp.
Step 4
Rinse the salted radish under cold running water to remove any excess salt, then squeeze out as much water as possible with your hands. Cut the blanched and cooled sea grapes into bite-sized pieces, about 3-4 cm in length.
Step 5
In a mixing bowl, combine the squeezed radish and the cut sea grapes. Add all the seasoning ingredients: minced garlic, tuna extract, plum extract, ginger extract, oligosaccharide, vinegar, and red pepper flakes. Wearing gloves, gently but firmly mix everything together. Mix vigorously (barak-barak) to ensure the seasonings are well incorporated and coat every piece evenly. This thorough mixing allows the flavors to penetrate deeply.
Step 6
